Gingerbread Lingonberry Cookies
Ingredients:
2 cups flour
¾ c white organic sugar
¾ c brown sugar (I used coconut sugar as a sub the second time and it was awesome)
2 tsp Cinnamon
¼ tsp allspice
¼ tsp Nutmeg
½ tsp salt
2 tsp baking soda
1 tbsp Cornstarch
1 egg
1.5 ( ¾ c) sticks of unsalted butter softened
1 tbsp fresh grated ginger
2 tsp vanilla extract
¼c molasses
1 jar of lingonberry jam - this can usually be found near other jams in your local grocery store, and always at IKEA!
Instructions:
1. Preheat your oven to 350º
2. Mix egg, sugar, butter, vanilla, ginger and molasses in large bowl until well blended.
3. In separate bowl, mix the rest of your dry ingredients.
4. Start by slowly mixing your dry ingredients into your wet ingredients a little at a time.
5. Once dough is fully mixed, it should be brown in color and thick
6. Roll dough into balls and place on baking sheet.
7. Use your finger to poke a hole in the center of the ball, if the sides crack, you can pinch dough back together so you won’t have a big crack in your cookie.
8. Spoon lingonberry jam into center hole of each cookie
9. Bake for 8-10min
