Lemon Berry Kefir Coffee Cake Recipe

Ingredients

3 cups of flour

1/2 cup butter softened

1 cup sugar and extra for topping

1 cup Lifeway Lemon Kefir (you could substitute with plain, whole milk kefir)

1 tbsp baking powder

1tbsp vanilla

2 tsp salt

2 eggs

The zest and juice of 1/2 lemon

1 to 2 cups berries of your choice

Instructions

  1. Pre-heat oven to 350º and grease or spray a 8in square baking dish (I used a small oval baking dish for pictures)

  2. Mix flour, baking powder and salt together

  3. In a separate bowl combine the softened butter, sugar, vanilla and lemon zest and juice

  4. Add the Kefir to the butter and sugar mixture

  5. Add eggs one at a time to the wet ingredients and mix well

  6. Slowly mix in the dry ingredients

  7. Once combined and thick in consistency, gently fold in the berries

  8. Pour mixture into baking dish and sprinkle generously with more sugar for a crunchy top

  9. Bake at 350º for approximately 45min
