Pumpkin Beer Cheese Bread

I feel like this week has flown by and I cannot believe it has been a whole week and a half since my last post. The weather has drastically changed in the past week, Halloween has come and gone and we are still busy little bees working on perfecting the garden for our wedding. Previously, I had put out a poll on Instagram on which recipe I should post; the pumpkin maple pop-tarts or this bread. Ultimately, the pop-tarts won, but the bread was pretty popular too. So, for all my savory lovers out there, here is my Pumpkin Beer Cheese Bread! It's soft and doughy and best eaten right out of the oven. I can honestly say, the pumpkin beer cheese is so good you could probably stop there and just dip bread into that.... But why would you when you can bake it into soft pillowy bread smothered in Everything but the Bagel Spice from Trader Joe's?? Here it is folks! The Pumpkin Beer Cheese Bread.

Ingredients for bread:

3 1/2 c flour

1pkt instant yeast or 2 1/4 tsp

1 tsp salt

1 1/2c water

4 tbsp melted butter



For the filling:

1 8oz pkg cream cheese

8 oz velveta

1/4 cup grated white cheddar

1 c dark beer

1 tbsp whole grain mustard

1/2 can pumpkin puree

1 tsp paprika

1 tbsp garlic

Everything Bagel Spice for topping


1. Start by making your dough. Mix flour, yeast and salt. Add water and blend. Let dough rise approx 1 hour or until doubled in size.

2. Meanwhile, on the stovetop melt your cream cheese and Velveta. Add in pumpkin puree and beer. Stir until smooth texture. Add in remaining ingredients and stir again until smooth.

3. Remove mixture from stove, let cool and preheat your oven to 350º

4. After your dough has risen, punch it down and roll it out nice and flat on your counter. Spread the mixture on top of dough. This should be a rather thick layer.

5. Using a pizza cutter, I cut the dough into rectangles or squares and stack them up. This can be a little messy.

6. After you stack them, pop them into a bread pan so that you are layering them from one side of the pan to the other and not bottom to top. This part won't be perfect because everything will be gooey, and that's ok!! Just stuff them all in there and if you have any cheese left over I just stuff that in between more dough once it is in the pan.

7. Generously top your bread with Everything Bagel Spice and bake at 350º for about 45 min or until a toothpick inserted in the center comes out clean.
